The BEST Spanish Rice EVER

Ingredients
  

  • 2 C. long grain rice
  • 2 C. chicken broth
  • 1 C. tomato sauce
  • 1/2 tsp. lemon juice
  • 1/2 Bell Pepper Red, Yellow or Orange (diced)
  • 1/2 onion diced
  • 2 T. olive oil extra virgin

Seasonings

  • 1 tsp. garlic powder
  • 1 tsp. chili powder
  • 1/2 tsp. ground cumin
  • salt to taste
  • pepper to taste
  • 1 tsp. oregano dried

Instructions
 

Directions:

  • In a medium saucepan over medium heat, heat oil. Add onion and pepper and cook until slightly softened, about 3 minutes. Add rice and cook stirring frequently. until it is slightly toasted about another 3 minutes. Stir in chicken broth, tomato sauce, lemon juice, chili powder,garlic powder, oregano, cumin. Season liberally with salt and pepper.
    Increase heat to high and bring to a boil. THEN reduce to a simmer and cover. Cook until all liquid is absorbed. About 15 minutes. Remove from heat ans let sit for 5 minutes. Remove the lid and fluff with fork. Top with cilantro and srve immediately!
