1.Adjust the oven rack to lower middle position and heat to 300°. Combine all the ingredients in a large dutch oven. Including the orange rind and all! 2. Place the dutch oven on your stove top and simmer over med-high heat. Uncovered. Once simmering starts cover with the lid and put it in the oven!3. Cook for about two hours. 4. Remove the pot from the oven and turn on your broiler.5. On a sheet pan, spread the meat out in a single layer. Return to oven for 6 minutes, 6. After 6 minutes turn the meat over and then return to the oven. Serve immediately with your choice of toppings!
