We love eating Mexican food! Store-bought prepackaged stuff just not compare to the homemade stuff, and eating out can become a little pricey so Jerm and I, being the foodies that we are, are ALWAYS on the lookout for EASY and delicious recipes we can tweak and make our own!
I am picky about how I like my rice. I do not like overcooked, mushy rice. It has to have the perfect components. Rice perfectly cooked, include sauteed veggies, not an oily/greasy taste, and have a “come back for more yummy flavor” AND be incredibly EASY!
I found a recipe I love… that I’m pretty sure you will too!

what DO I need?
- Long Grain Rice
- Chicken Broth
- Tomato Sauce
- Onion
- Red, Yellow, or Orange
- Extra Virgin Olive Oil
- Garlic Powder
- Chili Powder
- Cumin
- Lemon Juice
- Oregano
- Salt & Pepper

The BEST Spanish Rice EVER
Ingredients
- 2 C. long grain rice
- 2 C. chicken broth
- 1 C. tomato sauce
- 1/2 tsp. lemon juice
- 1/2 Bell Pepper Red, Yellow or Orange (diced)
- 1/2 onion diced
- 2 T. olive oil extra virgin
Seasonings
- 1 tsp. garlic powder
- 1 tsp. chili powder
- 1/2 tsp. ground cumin
- salt to taste
- pepper to taste
- 1 tsp. oregano dried
Instructions
Directions:
- In a medium saucepan over medium heat, heat oil. Add onion and pepper and cook until slightly softened, about 3 minutes. Add rice and cook stirring frequently. until it is slightly toasted about another 3 minutes. Stir in chicken broth, tomato sauce, lemon juice, chili powder,garlic powder, oregano, cumin. Season liberally with salt and pepper.Increase heat to high and bring to a boil. THEN reduce to a simmer and cover. Cook until all liquid is absorbed. About 15 minutes. Remove from heat ans let sit for 5 minutes. Remove the lid and fluff with fork. Top with cilantro and srve immediately!
We enjoyed this with homemade beans and steak fajitas! YUM!
