Slow cooked pork carnitas in a dutch oven. Fresh Pico de Gallo and diced avocado in a warm street taco size flour tortilla shell!
If you like street tacos, you will love these! I got this recipe from My Kitchen Escapades.
You start with a dutch oven, some Boneless pork butt, and seasonings and you are on your way to deliciousness!
What do I need to make the Pork carnitas
- 4 lbs. boneless pork butt cut into 2 inch cubes
- 1 1/2 tsp. salt
- 3/4 tsp. pepper
- 1 tsp. ground cumin
- 1 onion peeled and halved
- 1 medium orange cut in half, juiced and thrown in the pot!
- 2 bay leaves
- 1 tsp. dried oregano
- 2 Tbsp. fresh lime
- 2 C. water
It’ll look like this!
Put it on the stove top, Bring it to a simmer with no lid over med. high heat, Once simmering. Add the lid and transfer the pot to your oven that has been set to 300 degrees.
Now, here is where I changed up the recipe.
Cook for two hours, until fork tender.
But, not by choice, but if you are reading this, you know it has a happy ending!
I have to tell you what I did,
After the meat has cooked for 2 hours, I used a slotted spoon, transferred it to a sheet pan. and was waiting for the reduction to put it in the oven. for the remaining time. It only needed to reduce to a syrup for 20 minutes.
Cool, we can go outside and continue playing in the pool. We’ll just set the timer!
I suggest you don’t do that! I mean, seriously, I do know better!
Well, it didn’t work out like that. Our syrupy sauce cooked to the pan, like as in burned nastiness. Jeremy thought there was no way this would turn out. He had been waiting for this yumminess. No syrupy sauce for us.
Some of my best meals are “mistakes” We just skipped that part. I will try this again to find out if there is a huge difference.
Slow Cooked Carnitas Pork
Ingredients
- 4 lbs Boneless Pork Butt
- 1 1/2 tsp salt
- 1 tsp ground cumin
- 1 onion peeled and halfed
- 2 bay leaves
- 1 tsp dried oregano
- 2 c water
- 1 med. orange juiced, and add the whole orange
Instructions
- 1.Adjust the oven rack to lower middle position and heat to 300°. Combine all the ingredients in a large dutch oven. Including the orange rind and all! 2. Place the dutch oven on your stove top and simmer over med-high heat. Uncovered. Once simmering starts cover with the lid and put it in the oven!3. Cook for about two hours. 4. Remove the pot from the oven and turn on your broiler.5. On a sheet pan, spread the meat out in a single layer. Return to oven for 6 minutes, 6. After 6 minutes turn the meat over and then return to the oven. Serve immediately with your choice of toppings!
We still loved it and wouldn’t care if we made this mistake again!
Pico De Gallo
We made a simple Pico de Gallo using, Cherry tomatoes, white onion, cilantro, salt. I don’t have an exact recipe.
- I used cherry tomatoes, cut in half and then each half cut three more times ( i didn’t end up using the Roma tomato)
- About a 1/4 of a white onion, diced
- A handful of cilantro, chopped
- About 1/4 tsp. salt
I’m not a cilantro person, but Jerm is and a lot of others are so that is how we make it!
Do I have to use a dutch oven?
Nope! in fact you can even do it in a crock pot! Set it on high for 6-7 hours.
what else can i put on them?
I diced up some avocado and there you have it!
You can definitely add cheese, sour cream, guacamole or anything else you like. Serve with a side of beans with cheese and rice. So yummy!
