Tender chunks of chicken, crisp veggies, perfectly cooked Japanese style noodles with an delicious sauce that tastes better than take-out!

I have tried to make a lo-mein recipe so many times, and it’s good but it is always missing something. Something that I just couldn’t pinpoint. Pinterest to the rescue, AND one of my favorite food bloggers, Damn Delicious

Her recipe is for pork lo-mein in a crockpot. She has amazingly yum on her site! EVERY recipe we have taken from her site really is DAMN DELICIOUS!

We bought a Blackstone Griddle, and Jerm has become quite the Grill Master, so I put him to work! Together we did our recipe revamp, changed it to what we had on hand and

Ta-dah!

The best chicken lo-mein we have ever eaten was born!

The chicken is marinated, just long enough to cut up your veggies, so about 10 minutes or so. And then grilled. Set aside.

OH. MY. YUMMINESS!

The griddle is big and will keep the chicken warm while you move on to the vegetables, or take them off. Jerm usually takes it off so he can move the veggies all over the grill.

Then the veggies are grilled, but NOT overcooked! Just until they are a tender-crisp, but not mushy.

Who wants mushy vegetables? Definitely not us!

Then the noodles…Ah…the noodles. We pick ours up at Winco. They are the brand: Oriental Select-Chuka Soba. Just follow the package directions for cooking, before adding them to the veggies.

When the veggies are done, add the cooked noodles. Then pour the second batch of sauce and get to mixin’ with the spatulas. My guy is a pro…for reals!

If you remove the chicken from the grill, add it back to the veggie, noodles and sauce.

It will look like this! And then mix it it up!

It makes a bunch!

If you have a local Japanese or Chinese market you could also get them there, along with all the other ingredients. A lot of times their prices are even better than a grocery store.

Better Than Take-Out Chicken Lo-Mein

Ingredients

  • 2 lb. boneless chicken thighs 1/2" pieces
  • 2 yellow onion sliced
  • 4 carrots julienned
  • 1 head bok choy chopped
  • 1 pkg snow peas
  • 2 pkg Chuka Soba Japanese style noodles

Sauce (double the amounts, make two batches. One for the meat to marinate in. One to pour over the noodles and sauce when you combine.

  • 1/3 c. reduced sodium soy sauce
  • 3 cloves garlic minced
  • 2 Tbsp. brown sugar
  • 1 Tbsp. garlic chili pepper sauce Brand: Taste of Thai
  • 1 Tbsp. oyster sauce
  • 1/4 tsp. powdered ginger
  • 1 tsp. sesame oil
  • 3 tbsp. olive oil for grill

Instructions

  • Whisk together soy sauce, garlic, brown sugar sambel oelek, oyster sauce, ginger powder and sesame oil. Add chicken. Let marinate. (just long enough for you to cut up the veggies. Approximately 10 minutes)
    *Make second batch of sauce*
    Chop all vegetables.
    On blackstone grill med. high heat cook for 5 minutes or until no longer pink.
    Move meat to side.
    Add chopped vegetables to the grill add squirt of water and oil and cover with a large lid to steam about 3-4 minutes.
    Add meat, then cooked noodles to the vegetables, pour with the second batch of sauce. Mix until heated through for a couple more minutes.
    Serve hot!

Notes

We also add broccoli sometimes.  Add vegetables that you enjoy! You can also make this in a pan on the stove top. Or use a wok.

Do I need to have a blackstone grill for this recipe?

Heck no! You can totally use a skillet or wok! Just like a recipe, customize it to what you have in your home and kitchen!

why we love our blackstone griddle!

The Blackstone griddle has become our go to, especially in summer when it is hot and I don’t want to heat up the house. I love that we cook together as a “team.”

Confession: One snowy, day in December, I was craving this deliciousness. I do have a wok, but, after having it on the griddle, for me, it just isn’t the same. We store it in our garage in the winter. So, My Jerm uncovered it, cleaned it, and made it for us!

what can you cook on the griddle?

Oh my gosh!

EVERYTHING!!!

We cook asparagus, broccoli, any veggie you can imagine! Breakfast, omelets, scrambled eggs, french toast, pancakes, hashbrowns! (mike my mine extra crispy, please! ) Skewers, shrimp, You name it! You can make it!

Oh, and you can not forget the Hamburgers! Burgers on the grill are the bomb.com! Grill the bun also. Oh my!

EDIT: The recipe originally called for “Oelek Garlic Chili Paste.” When making this recipe, I use “A Taste of Thai Garlic Chili Pepper Sauce.” There is a huge difference. Use Oelek if you like spicy food. If you don’t, like myself, use the Chili Peper Sauce. You will get the flavor, without the heat! I have updated the recipe!
