Move over canned stuff! Various garden tomatoes, leeks, onion, shallot, and garlic in a broth-based soup with cream added makes this soup heavenly!

This soup hits the spot on a cold spring rainy day, a snowy winter day, or a windy fall day.

Well, I guess any day really is a day for this warm, delicious tomato soup! It is simple to make and the end result is worth each tomato you peel, and the hour it takes to wait for it! Promise! The flavor melds together perfectly.

OK! Let’s make it! This is what you’ll need…

Ingredients:

  • Tomatoes
  • Leeks
  • Onion
  • Shallot
  • Garlic
  • Salt and Pepper
  • Chicken Broth
  • Cream
  • Olive Oil

I used Roma, cherry, and big beef tomatoes.

In a stockpot, boil water and then add the tomatoes to the hot water for a couple of minutes until they crack, add them to cold water until they are cool enough to peel.

In another stockpot or dutch oven, add the olive oil and then the leeks, onion, shallot, and garlic. Saute until tender,

Add the peeled tomatoes to the onion mix and season with salt and pepper. Let cook for 5 minutes.

Add the broth and bring to a boil, then turn to simmer for 30 minutes.

Use an immersion blender, food processor, or blender and puree the ingredients together. Return to stockpot and add the cream and mix. Then simmer for an additional 30 minutes. Adjust seasoning to your liking. If the soup is still a little thin for your liking, simmer an additional 10 minutes.

Top with whatever garnish you would like. Parmesan cheese, croutons, eat with your favorite crackers or a hunk of bread!

Can I use store bought or canned tomatoes?

Yes. Why not!? If you’re in the mood for tomato soup and you don’t have garden tomatoes…then I say do it!

Tomato Soup

Vine-ripened tomatoes make this garden-fresh soup taste so delicious! Perfect for fall weather when you have lots of tomatoes!

Ingredients

  • 2-1/2 lbs. Tomatoes
  • 2 Leaks cleaned & sliced
  • 2 Onion Sliced
  • 1 Large Shallot Sliced
  • Salt
  • Pepper
  • 5 C. Chicken Broth
  • 1 C. Heavy Cream
  • 3 Tbsp. Olive oil
  • 3 cloves Garlic minced

Instructions

  • In a pot of boiling water, blanch the tomatoes for 1 minute and then transfer to cold water and then peel.
  • Slice leaks. (They are very sandy) I soak them in water to let the sand fall to the bottom of the container.
    Then slice the onion and shallot and garlic
  • In a dutch oven pot, Add the olive oil and the onion, shallot, leeks, garlic. Cook until slightly translucent. Add the peeled tomatoes, salt, and pepper, and cook for 5 minutes. Turn the heat to high and add the chicken broth. Bring to a boil then turn the heat to simmer for 30 minutes.
  • Use an immersion blender, food processor, or blender to puree the soup until smooth. Add the heavy cream and simmer over low for 25 minutes. IF still too runny, can simmer an additional 10 minutes.
  • Taste and adjust seasoning to your liking.
  • Enjoy!

Raise your hand if you like tacos…..raise your hand if you like soup…..if you raised your hand to either one,then you gotta try this recipe!
It is a really easy recipe….let me tell you what you need.
1 lb. Hamburger
1 Can Kidney Beans {rinsed & drained}
1 Onion {chopped}
1 1/2 C. Water
2 15 oz. Can Tomato Sauce
1  Can Crushed Tomatoes
1 packet Taco Seasoning Mix
1 Can Corn
OPTIONAL  extras:
Tortilla Chips or Corn Chips
Sour Cream
Shredded Cheese
Olives

Brown hamburger and onion together.  Drain the hamburger if you need to. Next add the taco seasoning mix. Mix until coated.  Add water, beans,tomatoes,tomato sauce,then corn.
Cook on medium-high heat until it starts to boil.  Turn down heat and let simmer until ready to eat.  Serve with the optional extras that your family likes.

Hey!  I told you I would share some recipes from my menu this week. This was what was on the menu last night. 
This  is a super yummy soup that we had in Hawaii when we went visit my Hubby’s Dad and his wife.  His wife is an AMAZING cook.  Her family owns a ranch called “Kahua Ranch” on the Big Island.  While we were there She and her Sweet Mother has a “Mini Luau” just for us!  It was so neat!  She also has cookbooks and sent me home with one that had the recipe for this soup!

 Really and truly if you like spinach and chicken, you will LOVE it!  You wanna know how to make it?  OK!

Ingredients:
60 Taro leaves, fresh Spinach or canned spinach to make ten Cups
1 lb. Cooked Chicken, cut into small pieces
1 12 oz. can coconut milk
1 1/2 tsp. salt
4 C. water
4 C. Chicken Stock
Garlic Powder (optional)
Season Salt (optional)
Parmesan Cheese (optional)

Prepare Taro leaves by boiling leaves, draining twice, boiling about 1 hour. If you choose to use fresh spinach boil leaves about 15 minutes until tender.  If using canned spinach drain well. Add coconut milk,chicken broth,salt and water. Puree. Ina fry pan cook chicken. (The recipe didn’t call for any other seasoning, but I added some season salt and garlic powder just for extra flavor.)  When the chicken is cooked through add it to the spinach puree.   Simmer on low until hot.  Freezes well.
(I cut the recipe in half)

You can serve it just as soup or spoon it over rice, add a salad and piece of hot buttered bread  and make it into a meal like this:

 OK..now truth be told, my Pretty Princess loves spinach and chicken but unfortunately she also “Eats with her Eyes”  This was our conversation when she saw what we were having.

Her: “Uh Mom, what is that?”
Me: “Oh, remember that yummy soup we had in Hawaii”?
Her: “No, What is it?’
Me:  “It’s Spinach and chicken soup.”
Her: “I’m not eating that! It look like poop!” ( as she picks it up on her fork and lets it fall back down on the plate}
Me:  “Come on  it’s good…. you liked it there and last time I made it… you just have to try it.”
So she closes he eyes and sticks her tongue out for the “try”….Me patiently waiting for her to say, “Your right this is good!” and….I get the “Ooh  yuck face” and then I know she won’t eat it. 
Her:  “I’ll just have spinach out of the can.”
Me: {sigh}  How ’bout just salad and bread?”
This coming from a child who DOES NOT like her food to touch on the plate.
Her: “No thanks, I’ll just have bread.”
But.. even though Pretty Princess didn’t like my Kahua Luau soup…(aka poop soup)
My Hubby did!  He always saves the day!  My hero!  He even took some for lunch today! 
Now, don’t let my little story discourage you…Make you some Kahua Luau Soup….If you don’t Eat with your eyes!  It’s yummy!
