FORGET the canned stuff…
If you are a bacon and bean lover, then these are for you. There are only TWO. Yes, you read that right! TWO ingredients and you will be in bean H.E.A.V.E.N!
This recipe was made and perfected by my dad. Each year when he and my husband would go deer hunting they would cook hearty, filling, and food that was easy to prepare.
In August of last year, my dad passed away. We have spent many weekends in the mountains this year, camping, and on our most recent trip, we spent some time reminiscing about him and the things he taught us to cook.
So, naturally, we HAD to make this yumminess in honor of him and I wanted to share it with all of you!
This is a stand alone hearty meal, or you can eat it as a side like we did.
Steak and with the bacon and beans…YUMMO! They totally compliment each other!
ingredients
- 1 lb. Bacon
- 3 cans VAN CAMP pork and beans
That. is. all.
First: Cut the bacon up into bite-size pieces. Then you fry the bacon until cooked. CRISP but not overly rock hard crisp. Does that make sense!? DO NOT DRAIN THE BACON GREASE.
Next: Add three cans of VAN CAMPS pork and beans. Dad always insisted it HAS to be made with VAN CAMPS pork and beans. Jerm tried making it with store brand beans and he says it doesn’t taste anything thing like my dad’s. So, make sure they are Van Camp brand beans.
Cook until thickened and all the grease is incorporated. He calls it “three bubble stirs” I was like, Huh? He said, “You know when you have to stir it right before it sticks?” “Because you don’t want burned beans.”
“Oh, I see.” So, basically let it get bubbly and stir. Three times, over med-high heat. It will take about 30-40 minutes. They will be creamy.
Okay, Okay, I know… leave all the bacon grease?
This sounds like a heart attack waiting to happen.
This was my exact thoughts, so I totally get it…
But you guys, I PROMISE! When it’s all combined, you would NEVER know there is bacon grease in it.
is there different ways to cook this?
Yes! We have cooked it on the the stove top when we were craving it!
My Jerm cooked this particular batch over the campfire using standing tripod.
- Use a Tripod
- You can do it on the Stove Top
- You can do it on a Camp Chef
- You can use a Grate over the fire
- Cast Iron Skillet
Bacon & Beans
Ingredients
- 3 cans Van Camp Pork and Beans
- 1 lb. Bacon cut into bite size pieces
Instructions
- Fry Bacon until done, but crispy, but not overly crispy.
- Add 3 cans of pork and beans with juices,Cook over med-high heat stirring frequently enough that the beans do not cook to the bottom of the pan, and bacon grease is incorporated and they look creamy.ENJOY!
