“Peanut butter oatmeal soft cookie base topped with chocolate chips that melt and then reharden to form the second layer of chocolate-y goodness and a creamy peanut butter frosting tops off this delectable cookie bar”
My mom has made this delicious cookie since I can remember. It was a childhood favorite. It reminds me of the lunch lady bars, except these have TWO layers on top of the cookie, the first one being chocolate and the next is creamy peanut butter frosting!
the cookie
The cookie bar itself almost melts in your mouth. It is so soft, yet firm. The base consists of creamy peanut butter, softened butter, flour, oatmeal and salt, and baking soda. Super simple. You bake it for 15 minutes at 350 degrees.
The Chocolate Layer
Chocolate Chips. 1 bag of chocolate chips that you sprinkle on the cookie right out of the oven. Wait about 5 minutes until the chips have melted and then spread that chocolate over the soft cookie.
If you can be patient…let the chocolate set and reharden on its own. If not, put them in the fridge for about 20 minutes and then you are ready for the peanut butter frosting layer.
The peanut butter frosting layer
Peanut butter, powder sugar and milk. EASY. DELICIOUS.
Then there is the taste test.
Yep!

- 1/3 c. peanut butter
- 1 egg
- 1/2 tsp. baking soda
- 1/2 tsp. salt

- 1 bag chocolate chips

Instructions

Right out of the oven sprinkle with chocolate chips on top of the cookie and let melt. Set aside. (I like to pop the pan into the fridge for about 20 minutes to speed up the hardening of the chocolate) Mix 2 cups powdered sugar, 1/2 c. peanut butter and little milk to thin the frosting. Spread on top of cookie and chocolate mixture.
MMMM… they definitely passed! So GOOD!
