I have to share this yumminess that I made over Christmas break for my sweeties.
These were so yummy, almost like a little mini cake!
I added some chocolate chips to ours, but, I think next time I’ll just do the craisins.
I will definitely be making these again!
Craisin Pancakes
3/4 C. pulp-free orange juice or milk
1 C. all purpose flour
2 T.white sugar
1 tsp. baking powder
1/2 t. salt
1/4 t. cinnamon
1 egg
1/2 t. vanilla
1 c. craisins
cooking spray
Preheat griddle to 250 degrees, lightly coat with cooking spray
In a large bowl combine flour, sugar,baking powder,baking soda,salt,and cinnamon
gently beat egg. Add to dry ingredients. Add orange juice and vanilla until combined. Fold in craisins. Pour 1/4 cupfuls of batter on preheated griddle,cook until bubbles appear on top of pancakes then flip and allow to cool for 2-3 minutes more until golden brown.
Makes 12 pancakes
The only thing I did different was cut the 1 c. craisins to 1/2 c. and added 1/2 c. chocolate chips. I dusted them with powdered sugar and then a good amount of the whipped cream.
What would you put on top of yours? I didn’t think the maple syrup would taste too good…
