My cute Mom invited us for Sunday dinner. I wanted to take dessert.
I’ve been wanting to make this recipe for a while. I got it from a blog last year and I really wish I knew which one so I could THANK her. These are seriously to die for!

Lynn’s Pumpkin Chocolate Chip Cookies
1/2 C. Unsalted Butter (room temp.)
1 1/2 C. Sugar
1 C. Canned Pumpkin
1 Egg (room temp.)
1 t. vanilla extract
2 1/2 C. All Purpose Flour
1 t. Baking Powder
1 t. Baking Soda
1/4 t. Salt
1 t. Cinnamon
1/2 t. Nutmeg
1/2 C. Chocolate Chips
Preheat oven to 350 degrees In a bowl mix butter and sugar until fluffy. Add pumpkin,egg and vanilla. Beat until fluffy. Sift dry ingredients. Mix well. Mix in Chocolate Chips. Bake 10-12 Minutes. Makes 3 dozen cookies.
Ok, but, I just couldn’t stop there. I just HAD to make some cream cheese frosting.
Cream Cheese Frosting
(Betty Crocker New Cookbook)
1 8oz. package Cream Cheese
1/4 cup (stick) butter
1 t. vanilla
2 t. milk
4 C. powdered sugar
1/4 cup (stick) butter
1 t. vanilla
2 t. milk
4 C. powdered sugar
Beat Cream Cheese,butter,milk,vanilla in a medium bowl until smooth. Gradually best in powdered sugar at a low speed. 1 cup at a time until smooth and spreadable.
I made the pretty, perfect round ones into Whoopie Pies..
(you know, the with whoopie pie craze going around, I was feeling a little behind!)
Then I had some not so perfect round ones.

they started out like this….. just a dollop of frosting on the top.
But then I stacked them…and they became this: two layers of pumpkin chocolate-y cream cheese-y goodness.
I didn’t take pictures of the ones that were going to my Mom and Dad ‘s
(they looked much prettier). ..
They looked a little different but, sure tasted the same!
I left all the rest but these three with them so that they would eat them and not me!

Were they absolutely DELISH? YES!
The pumpkin flavor is subtle and everything just works so well together!
