We went to church with family and then had a potluck dinner together.
My deviled eggs are a are always a request and they are so
simple,and easy!
I have kind-of taken over my Mom’s job and make her potato salad recipe too.
Both recipes are easy and SUPER DELICIOUS!!!
*notice it’s not just delicious…but SUPER delicious*
I want you all to be able to make this yourselves…I’m going to give you both recipes!
But before I do… It’s Monday Menu Madness! Let’s talk some food!
Monday: Creamy Cauliflower Soup
Tuesday: Chicken Enchilada’s
Wednesday: Lasagna, Salad,Garlic Bread
Thursday: Leftovers
Friday: Soft shell Burritos & Homemade refried beans
Saturday: Sloppy Joes & Fries
Sunday: Baked Chicken, Mashed Potatoes, Veggie
Now..let’s talk some RECIPES!
Mom’s Potato Salad
10 Medium Potatoes
1 Dozen Eggs
4 Stalk Celery
1/2 Bunch Green Onion
1 lb. Bacon
3 Cups Mayonnaise
1/2 C. Miracle Whip
4 T. Mustard
2 T. Sugar
Evaporated Milk (for thinning the sauce a little)
Seasoning Salt (to taste)
Garlic Powder (to taste)
Salt & Pepper (to taste)
Boil potatoes (with their skin on) and eggs together in the same pot until potatoes are fork tender. Then peel potatoes and eggs. chop into medium size chunks. Fry bacon until crisp. Crumble into bowl over the chopped potatoes and eggs. Dice celery and bunch of green onion. add to the bowl with the other ingredients. In another bowl mix mayo, salad dressing, mustard, seasoning’s, sugar and milk (until thinned some but not too runny.) Add to the sauce to the potato mixture. Chill and serve when ready!

I have to tell you a little story about my cooking adventure! Well first off, the bacon burned, not just a little..like full on smoke detectors in the house went off and that was even with the oven door closed! Ya, pretty bad.
So…to fix that, hubby got some bacon bits from the store to rescue me, instead of mixing them in we sprinkled them on top. Ya, it was OK, but freshly cooked bacon throughout it …
would have been so much better.
Hopefully next time, I’ll be a little more attentive to my cooking bacon!

Simple Deviled Eggs

Now for the egg story…. I pretty much cook by how much I think I need of something..so I guess you could say I cook “by taste”

I uhhh…..
added WAY too much seasoning salt . Oh, they were plain out Nasty! I added a little sugar to cut out the salty-ness, but then I had to add some garlic powder to fix the sugary-ness.

Yes, everyone still enjoyed them and wouldn’t have even known about them If I didn’t share the stories! phew……
After those two mess ups I was so done…No oreos for the family this Easter!

That potato salad recipe has a few differences from mine. I am definitely going to try yours out. The combo of Miracle Whip and mayo sound interesting. Thanks for the idea just in time for summer.
