Kahua Luau Soup

Hey!  I told you I would share some recipes from my menu this week. This was what was on the menu last night. 
This  is a super yummy soup that we had in Hawaii when we went visit my Hubby’s Dad and his wife.  His wife is an AMAZING cook.  Her family owns a ranch called “Kahua Ranch” on the Big Island.  While we were there She and her Sweet Mother has a “Mini Luau” just for us!  It was so neat!  She also has cookbooks and sent me home with one that had the recipe for this soup!

 Really and truly if you like spinach and chicken, you will LOVE it!  You wanna know how to make it?  OK!

Ingredients:
60 Taro leaves, fresh Spinach or canned spinach to make ten Cups
1 lb. Cooked Chicken, cut into small pieces
1 12 oz. can coconut milk
1 1/2 tsp. salt
4 C. water
4 C. Chicken Stock
Garlic Powder (optional)
Season Salt (optional)
Parmesan Cheese (optional)

Prepare Taro leaves by boiling leaves, draining twice, boiling about 1 hour. If you choose to use fresh spinach boil leaves about 15 minutes until tender.  If using canned spinach drain well. Add coconut milk,chicken broth,salt and water. Puree. Ina fry pan cook chicken. (The recipe didn’t call for any other seasoning, but I added some season salt and garlic powder just for extra flavor.)  When the chicken is cooked through add it to the spinach puree.   Simmer on low until hot.  Freezes well.
(I cut the recipe in half)

You can serve it just as soup or spoon it over rice, add a salad and piece of hot buttered bread  and make it into a meal like this:

 OK..now truth be told, my Pretty Princess loves spinach and chicken but unfortunately she also “Eats with her Eyes”  This was our conversation when she saw what we were having.

Her: “Uh Mom, what is that?”
Me: “Oh, remember that yummy soup we had in Hawaii”?
Her: “No, What is it?’
Me:  “It’s Spinach and chicken soup.”
Her: “I’m not eating that! It look like poop!” ( as she picks it up on her fork and lets it fall back down on the plate}
Me:  “Come on  it’s good…. you liked it there and last time I made it… you just have to try it.”
So she closes he eyes and sticks her tongue out for the “try”….Me patiently waiting for her to say, “Your right this is good!” and….I get the “Ooh  yuck face” and then I know she won’t eat it. 
Her:  “I’ll just have spinach out of the can.”
Me: {sigh}  How ’bout just salad and bread?”
This coming from a child who DOES NOT like her food to touch on the plate.
Her: “No thanks, I’ll just have bread.”
But.. even though Pretty Princess didn’t like my Kahua Luau soup…(aka poop soup)
My Hubby did!  He always saves the day!  My hero!  He even took some for lunch today! 
Now, don’t let my little story discourage you…Make you some Kahua Luau Soup….If you don’t Eat with your eyes!  It’s yummy!
